What is the difference between a waiter's knife and a sommelier knife?
In practice nothing: they are two names for the same folding knife with foil cutter, worm and lever. Sommelier knife is used more often for the more luxurious versions with a wooden handle and a two-step lever.
Why does a cork break when you open a bottle?
Almost always because the worm sits at an angle in the cork or has been turned in too far. Start in the middle of the cork, keep the worm upright and stop just before the last coil. With old, dry corks a thin worm with an open coil helps.
Where is the best place to cut the foil?
Below the second ridge of the bottle neck, so not just under the cork. That way the wine never runs along a piece of foil while you pour and the rim stays clean. Turn the bottle round while the blade stays still.
Can a waiter's knife go in the dishwasher?
No. The hinge and the spring will rust and the foil blade goes blunt from the detergent. Wipe the knife with a dry cloth after use, take cork dust out of the worm and give the hinge a drop of oil now and then.
