What is the difference between stirring and shaking?
Stirring chills more slowly and works less air into the drink, which keeps the cocktail clear and silky. Shaking makes it airy and slightly watery. Anything made only of spirits and vermouth you stir; as soon as juice, egg or cream is involved, you shake.
How large should a mixing glass be?
From 55 to 65 cl you make one to two cocktails, because a lot of ice has to go in alongside the drink. From 70 cl you can do three at once, and that is the standard bar size. Around 80 cl is meant for working ahead.
What does yarai mean on a mixing glass?
Yarai is the diagonal diamond pattern cut into the wall, Japanese in origin. It gives grip to wet hands and refracts the light, which makes the glass stand out behind the bar. It has no effect on the cocktail itself.
How long should you stir a cocktail?
Twenty to thirty seconds, with the glass filled two-thirds to three-quarters with large blocks of ice. You can hear when it is going well: an even, low sound without rattling. Small ice melts too fast and dilutes the cocktail more than you want.
