Does a champagne sabre have to be sharp to work?
No. A sabre does not cut, it taps. The flat back of the blade hits the glass seam just under the cork ring, and the pressure in the bottle does the rest. A real cutting edge would only be dangerous.
Do splinters of glass end up in the champagne?
In practice, no. The neck breaks away as a single ring and the first burst of foam rinses the opening clean. Do work with a clean, well-chilled bottle and always point the neck away from people.
How cold does the bottle need to be for sabring?
Thoroughly chilled, between six and eight degrees. Cold glass is under less tension and breaks more cleanly along the seam. A bottle at room temperature is unpredictable and can crack irregularly.
What does a Descorjet champagne opener do?
It clamps around the neck and pushes the cork out under control, without a bang and without champagne foaming over. Handy behind a bar or in a restaurant where no glass may end up on the floor.
