The IBA Tiki recipe
according to the IBA specification
Place the slice of ginger in the shaker and muddle it until the juice is released.
Add the rums, liqueurs, passion fruit purée, and juices.
Fill the shaker with ice and shake vigorously for 15 seconds, so the pineapple juice starts to foam.
Fill a chilled tiki glass with crushed ice and double-strain the drink over it, leaving the ginger fibers behind.
Garnish with citrus and a dried pineapple slice and serve with a straw.

The story
The IBA Tiki was created by Cuban bartender Diosmel Mendoza Medrano. He made it in 2022 at El Polinesio, the tiki restaurant at the Habana Libre hotel in Havana, on the occasion of the IBA’s 69th World Cocktail Championship. The championship was held in November 2022 in Varadero, Cuba. The name pays tribute to the International Bartenders Association itself. In 2024, the IBA added the drink to its official list, under New Era Drinks. Whereas classic tiki drinks such as the Zombie rely on Jamaican and Demerara rum, this one revolves around Cuban rum, with amaretto and hazelnut as an Italian accent.
The right glass
A tiki glass with a capacity of 45 to 50 cl is not decoration here but a necessity: it holds over 23 cl of drink plus a glass full of crushed ice. The thick walls retain the cold, while the tall shape makes the ice melt slowly. The IBA specifies a chilled tiki glass, so place it in the freezer for a while. View our tiki glasses.

The right tools

What do you need to make an IBA Tiki?
For an IBA Tiki, you need rum, amaretto, and liqueur. Well-known bottles include Havana Club. On each drink page, you can read the percentage, what it tastes like, which cocktails it pairs with, and which glass you need.
Variations & twists
Can't find Havana Club Profundo and Smoky? Use 3 cl of light Cuban rum and 3 cl of aged Cuban rum, with a barspoon of smoky whisky for the smokiness. Without Frangelico, it will be slightly less nutty but will remain balanced. Continuing in the tiki tradition: a Mai Tai with orgeat or the Don's Special Daiquiri with passion fruit and honey. For pineapple and rum with a bitter edge, the Jungle Bird is the next step.
Serving tip
Juice the pineapple fresh or buy cold-pressed juice: only fresh juice produces that natural layer of foam. You can find passion fruit purée in the freezer section at wholesalers and Asian grocery stores. You can also strain fresh passion fruit yourself; allow three to four fruits for 3 cl.

The IBA specification contains nine ingredients: 3 cl Havana Club Profundo, 3 cl Havana Club Smoky, 1.5 cl amaretto, 0.5 cl Frangelico, 5 drops of Luxardo maraschino, 3 cl passion fruit purée, 9 cl fresh pineapple juice, 3 cl fresh lime juice and a thin slice of ginger. Amaretto and Frangelico provide nutty sweetness, passion fruit and lime provide acidity, pineapple provides juice and foam, and ginger provides a spicy finish.
Which rum do you use for an IBA Tiki?
The original calls for two Cuban rums from Havana Club. Profundo is a light, straw-coloured rum with a dry, spicy flavour. Smoky is a darker rum with a smoky note. Both are not available everywhere outside Cuba. A good alternative is 3 cl of white Cuban rum, such as Havana Club 3 Años, with 3 cl of aged rum, such as Havana Club Añejo Especial. For the smoky note, add a bar spoon of peated Islay whisky.
What exactly is tiki
Tiki is a bar style that originated in California in the 1930s, with Don the Beachcomber in Hollywood and later Trader Vic in Oakland as its best-known names. They served complex rum drinks with citrus, syrups and spices, in a setting full of bamboo and Polynesian tiki statues. Classics from that era include the Zombie, the Mai Tai and the Missionary's Downfall. The IBA Tiki is a modern Cuban version of that tradition.
Passion fruit purée and fresh pineapple
The IBA uses passion fruit purée, not syrup. Purée is the fruit pulp without the seeds, with at most a little sugar, and mainly provides acidity and a strong passion fruit aroma. Syrup is much sweeter; if you use it anyway, halve the amount and add a little lime juice. For the pineapple juice, cut a ripe pineapple into pieces and run them through a juicer, or blend them and strain the juice. Half a pineapple yields enough for two or three glasses.
Make an IBA Tiki for a group
For a group, mix everything except the ice in a pitcher beforehand. For six glasses, that includes 54 cl pineapple juice and 18 cl of each rum. Muddle the ginger beforehand in some of the lime juice and then strain it out so it is distributed evenly. Then shake two glasses at a time with ice, because only shaking gives the pineapple juice its foamy layer. Pour over fresh crushed ice.
Non-alcoholic IBA Tiki
To make a non-alcoholic version, leave out the rums, amaretto, Frangelico and maraschino and enhance the tropical elements. Shake 3 cl passion fruit purée, 12 cl fresh pineapple juice, 3 cl lime juice, a muddled slice of ginger and 1 cl orgeat or almond syrup for a nutty note.
