Pommery
Pommery is a Champagne house from Reims, known for Brut Royal and Madame Pommery, the widow who made the house great. The house stands for a fresh, dry style. Here you can read how the bottles differ, how to serve them and which glass goes with them.
Madame Pommery's house
Pommery comes from Reims, one of the two major Champagne cities. The house is inextricably linked to Louise Pommery. After her husband's death, she took over its management in the nineteenth century, and under her leadership Pommery grew into one of the region's great names. She is considered the person who put the dry brut style on the map: at a time when champagne was usually sweet, Pommery released a dry champagne in 1874. Her name lives on in the top cuvée Cuvée Louise.
Beneath the estate in Reims lie kilometers of cellars in ancient chalk quarries dating back to Roman times. The bottles mature there at a constant, cool temperature. Brut Royal is the house's signature wine, made from the three Champagne grapes: chardonnay, pinot noir and pinot meunier. There is also a rosé, a sweeter Dry Elixir, Royal Blue Sky for drinking over ice, and the Apanage range with a Blanc de Blancs and a Blanc de Noirs. Pommery also makes sparkling wine in southern England under the name Louis Pommery England.
In brief
Seven bottles from the same house
All 12.5%, but the grape blend and amount of sugar vary. This determines whether a bottle is suited to an aperitif, a meal or dessert.

Brut Royal
Fresh, lively and delicate, with fine bubbles. Pure in flavor without being sharply dry. Also available in half bottles, magnums and larger sizes.

Brut Rosé
Subtle and lively, with light red summer fruit: raspberry, strawberry and redcurrant.

Blanc de Blancs
From the Apanage range. Delicate and elegant, with acacia, grapefruit and fresh apple.

Blanc de Noirs
White champagne made from pinot noir and pinot meunier, which matures extra long in the cellars. Rich and full-bodied.

Grand Cru Vintage
Champagne from a single vintage sourced from grand cru villages. Silky smooth, with floral notes.

Royal Blue Sky
A sweeter champagne that is best served over ice. Fruity and refreshing.

Cuvée Louise 2005
The top cuvée, named after Madame Pommery. This vintage was bottled without added sugar.

Fresh, light and delicate
Citrus & white flowers
Citrus, green apple and white flowers, underpinned by a soft note of brioche. The Blanc de Blancs is even fresher, while the Blanc de Noirs is richer and fruitier.
Lively and light
Pommery stands for a fresh, light style with a fine, lively bubble. Not a heavy champagne, but one that refreshes and keeps tingling on the palate for a long time.
Dry and clean
The finish is dry and clean, with citrus and a subtle mineral edge. That makes Brut Royal just as good with oysters as it is for a toast.
Flavor profile of Brut Royal. Dry Elixir and Royal Blue Sky score much higher on sweetness; Cuvée Louise Brut Nature scores lower.
Three ways to serve Pommery
Chill the bottle to 8 to 10 degrees and turn the bottle, not the cork, when opening it. The cork will then come out with a sigh, while the bubbles stay in the bottle.
Purely as an aperitif
Pour down the side of a tilted glass and fill it to about two-thirds. A 75 cl bottle yields around five glasses. Brut Royal pairs well with oysters, shrimp and small fish-based bites.
Glass: flute or tulip →Royal Blue Sky over ice
This sweeter champagne is made to be enjoyed over ice. Pour it into a large wine glass with a few ice cubes. The meltwater is part of the experience and keeps the champagne cold for a long time on a warm day.
