Tequila still made with a stone wheel
Patrón has been made since 1989 at Hacienda Patrón in Atotonilco el Alto, in the highlands of Jalisco. The brand built its reputation by doing something unusual in the tequila world: the agaves are not steamed in an autoclave but slowly cooked in brick ovens, and some of the juice is still pressed with a tahona, a massive volcanic stone wheel that rolls the cooked agave flat.
That tahona juice is blended with juice from a modern roller mill, and the two distillates together give Patrón its character: the wheel brings earthy, sweet depth, while the mill brings freshness and citrus. Everything is 100% blue weber agave, everything is bottled at 40%, and every bottle is finished, numbered and sealed with beeswax by hand. Bacardi acquired the brand in 2018.

What types of Patrón are there?

Patrón Silver
Clear and unaged, bottled immediately after distillation. Sweet cooked agave, citrus and a peppery edge. The bottle for cocktails.

Patrón Reposado
Aged for just over two months in oak barrels. The wood adds vanilla and caramel to the agave without overpowering it.

Patrón Añejo
Aged for over a year in small oak barrels, giving it an amber color: dried fruit, vanilla, honey and oak.

Patrón El Cielo
The house's prestige bottle: an unaged tequila distilled four times, making it exceptionally smooth and floral.

Cooked agave, citrus and black pepper
Sweet agave & citrus
Sweet cooked agave up front, with citrus zest, green herbs and a hint of black pepper. The Añejo also brings vanilla and dried fruit.
Full and slightly peppery
Fuller and earthier than many tequilas, with distinct agave juice and a pleasant peppery edge. The tahona component gives it extra body.
Clean and dry
A dry, clean finish with pepper and citrus. The Reposado and Añejo finish rounder, with vanilla and oak.
Flavor profile of Patrón Silver. The Reposado scores higher on sweetness, while the Añejo is sweeter and spicier; El Cielo is the softest and most floral.
Three ways to drink Patrón
A 100% agave tequila doesn't need salt and lime: that practice comes from cheap mixto tequila. Take small sips at room temperature.
Neat, without salt and lime
4 cl in a narrow tasting glass or tequila glass. Let it sit in your mouth briefly before swallowing: that way you taste the cooked agave and pepper instead of just alcohol.

50 ml Patrón Silver, 25 ml fresh lime juice and 20 ml triple sec shaken vigorously with ice and strained into a margarita glass with a half-salted rim. Using fresh lime instead of mix makes a huge difference.
